Chicken Soup
Chicken soup is the perfect dish to nourish blood. Use fresh seasonal vegetables if you can.

1 organic chicken – remove skin
3 sticks of celery
1 BIG bunch of greens (coriander/parsley/spinach)
2 carrots
1 half of squash
1 sweet potato
1 onion halved
2 bay leaves
5 dates
6 cloves of garlic – or less if you prefer!
Seasoning of sea salt and freshly ground black pepper
1 tablespoon of goji berries – added 15 minutes before the end of cooking
Juice of 1 lemon (to be added according to your taste at the end of cooking)
Preparation
· In a large pan, cover the chicken with water
· Add all the above ingredients except for the goji berries and lemon juice
· Bring the pan to the boil
· Simmer with a lid on for 3 hours
· Add goji berries and simmer for 15 mins
· add lemon juice to taste
Tips
The medicinal part of the soup is the broth. Therefore, if I have asked you to have the broth as a daily tonic, please reduce the broth by half (to the amount that would fill a x12 muffin tray). The more concentrated it is the more delicious and nutritious it is. The broth should turn into jelly when cold.
Freeze the broth in a muffin tin, then defrost and reheat one cube per day as a tonic (please boil this properly as I don’t want you to have food poisoning!).
Equally, if you want to eat the soup as a meal, take the meat off the chicken add it back into the soup with a fresh batch of vegetables (the vegetable used to make the soup are best discarded).
Enjoy!
